Easy Vegan and Gluten Free Brookies

Servings 8 | Prep time 7minutes | Cooking time 25minutes


Ingredients

  • brownie layer
  • 1 and 1/2 cups almond flour
  • 1/2 cup gf oat flour
  • 1 tsp baking powder
  • 1/3 cup coconut sugar
  • 1/2 cup cocoa powder
  • 3 tbsp extra virgin olive oil
  • 1/3 cup maple syrup
  • 1/3 cup runny almond butter
  • 1 tsp vanilla extract
  • 1/2 cup dairy free milk
  • 1/3 cup chocolate chunks
  • cookie layer
  • 1 cup + 2 tbsp gf oat flour
  • 1/3 cup almond flour
  • 1/3 cup runny almond butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 3 tbsp dairy free milk
  • 1/3 cup chocolate chips

How To Make Brookies

  • preheat the oven to 350 degrees.
  • mix all brownie ingredients and separately mix the cookie layer ingredients.
  • add the brownie ingredients to an 8 x 11 baking pan lined with parchment paper.
  • distribute the thick cookie dough on top of the brownies as much as possible and bake at 350 degrees for 25 minutes.
  • let the brookies cool completely before cutting into squares, this is very important.
  • store in the fridge or freezer in an airtight container and enjoy!
