Vegan Carrot Turmeric Ginger Smoothie

A delicious, creamy, antioxidant filled smoothie made with carrots, turmeric, ginger, and more. A healthy way to begin the day.

Ingredients

  • 6 ounces purified water
  • 1 cup chopped carrots
  • 1 cup frozen pineapple
  • ¼ cup raw cashews (soaked in water for at least four hours if you don’t have a high-powered blender)
  • 2 fresh dates – remove pits
  • 2 teaspoons of fresh turmeric – minced
  • 1 teaspoon of fresh ginger – minced
  • ¼ teaspoon of fresh ground black pepper

Instructions

  1. Put the ingredients in a blender and blend on a high speed until smooth and creamy. You might have to blend through two settings.
  2. Enjoy!
