Healthy vegetable kabobs are a summer classic, but you can also make them year-round on an indoor grill.
- 1/2 onion
- 1 zucchini
- 1 eggplant
- 2 bell peppers
- Cut all vegetables into 1-inch pieces.
- Thread vegetables onto the soaked wooden skewers and season with pepper and salt.
- Place skewers into the air fryer basket and cook for 10 minutes at 390 F. Turn halfway through.
- Serve and enjoy.
